From Ethiopian Soils to Your Roastery

Cultivation & Conscious Farming

Our process begins in the lush high-altitude regions of Guji and Gedeb. We partner directly with smallholder farmers who treat coffee as a legacy, not just a crop. We provide technical support to ensure 100% organic, chemical-free cultivation, focusing on soil health and the preservation of heirloom varieties that give Ethiopian coffee its legendary profile.

Selective Harvest & Cherry Selection

Quality is born during harvest. We strictly enforce selective hand-picking, ensuring only deep-red, peak-ripe cherries are harvested. This manual checkpoint prevents under-ripe or overripe fruit from entering the specialty lot, ensuring a cleaner fermentation and more consistent roast.

Expert Processing (Washed & Natural)

We utilize two primary methods to unlock distinct flavor profiles

  • Washed (Wet) Process: Cherries are pulped, fermented, and washed with clean water to produce bright, floral, and acidic profiles common in regions like Yirgacheffe.
  • Natural (Dry) Process: Whole cherries are sun-dried on raised beds, allowing the beans to absorb sugars from the fruit for wine-like, complex flavors.
Meticulous Drying & Bed Management

Drying is a critical science. Our beans are spread on raised wire-mesh tables (African beds) to ensure uniform airflow. We maintain vigilance over moisture levels, aiming for an optimum 10% to 12% to prevent fungal infestation and flavor deterioration.

In-House Quality Control & Cupping Lab

Before any lot reaches the national exchange, it passes through our internal Cupping Lab. Our Q-graders perform rigorous sensory evaluations—assessing aroma, acidity, body, and sweetness—to ensure every lot meets Gendekore’s “Excellence” standard. This pre-screening drastically reduces the risk of lot rejection at the government level.

Secondary Processing & Export Packaging

Once the coffee is dried to perfection, it is hulled, screen-graded, and density-sorted to remove any remaining defects. For specialty lots, we use 60kg jute bags with GrainPro liners to hermetically seal and protect the green beans from moisture and contamination during transit.

Government Inspection & Documentation

Every shipment is inspected by the Ethiopian Coffee and Tea Authority’s Coffee Liquoring Unit (CLU). We handle the complex documentation required for international trade. including Phytosanitary Certificates, ICO Certificates of Origin, and EUDR due diligence statements.

Logistics & Exporting

We manage the 900km inland transport corridor from Addis Ababa to the Port of Djibouti via road or the Addis-Djibouti railway. Our logistics team tracks every container to ensure a seamless hand-off to ocean carriers for global delivery.

Roaster Partnership Support

Our relationship doesn’t end at the port. We offer ongoing partnership support, providing roasters with detailed lot data, crop updates, and cupping feedback. We act as your eyes and ears on the ground, ensuring a reliable, transparent, and high-quality supply year-round.
