The journey begins at peak polyphenol ripeness, a narrow window where sucrose and fructose are at maximum concentration, chlorogenic acids are fully developed, and aromatic precursors are locked within the mucilage. Once picked, the cherry’s native enzymes—pectinases, invertases, and polyphenol oxidases—remain active, and how we manage them determines everything. Dry too quickly, and the cup falls flat. Allow moisture to linger unevenly, and uncontrolled fermentation produces earthy, boozy defects. The line between brilliance and fault is measured in hours.

This is why we dry our cherries slowly on raised African beds, elevated on mesh-bottomed tables that allow 360-degree air circulation. Under the Yirgacheffe sun, we turn the cherries meticulously by hand every few hours—not out of ritual, but to ensure even moisture loss, prevent anaerobic pockets, and regulate the metabolic activity of native yeasts essential to fermentation. We monitor internal bean moisture daily, targeting a steady decline from sixty percent down to eleven or twelve percent over eighteen to twenty-five days. This extended curve is deliberate: we are not drying the cherry; we are curing it, allowing the fruit to ferment gently around the bean, much like fine wine ages in oak.

We also track pH stability, because acidity is the backbone of any great specialty coffee. A sudden drop signals over-fermentation; a flat line suggests stalled enzymatic activity. Our goal is a gradual, controlled acid evolution that preserves floral high notes while building structural depth.

The payoff is unmistakable in the cup. For the specialty roaster, our natural Yirgacheffe delivers vibrant blueberry and strawberry jam, anchored by smooth dark chocolate, all carried by a remarkably clean, wine-like finish. Our drying teams are custodians of a living tradition, reading the cherries with touch and smell—senses honed over years of working alongside the land.
